I can only help with a few of these questions:

  - In the Low German that my grandparents spoke, if was
      /sk/ in /duItsk/ 'German' and
      /S/  is /SruIb@n/ [SR\uIbm=] 'to write'.
    I don't know the language good enough to come up with more words.

  - In Modern Dutch, it is
      /s/  in |duits| /d8Yts/ 'German' and
      /sx/ in |schip| /sxIp/  'ship'
